Grilled Zucchini with Balsamic Basil Marinade

Ingredients

  • 1/4 cup Chopped fresh basil leaves
  • 3 tbsp  Balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Honey
  • 3 cloves Garlic, minced
  • 1/3 cup Olive oil, extra virgin
  • 4 Zucchini cut into thick strips
  • salt & pepper to taste

Instructions

  1. In a small bowl, mix chopped basil, vinegar, mustard, honey, and garlic. Whisk together, blending in oil.

  2. Marinate the zucchini strips in the balsamic basil sauce for at least an hour before grilling.

  3. Place zucchini on a barbecue grill over a solid bed of medium coals or medium heat on a gas grill. Close lid on gas grill. Cook until brown on each side, turning as needed.

  4. Add salt and pepper to taste.
