Instant Pot Potatoes, Bacon, & Green Beans Recipe

Ingredients

  • 8 slices bacon cut into small pieces
  • 1 large onion chopped
  • 4 cloves garlic chopped
  • 3 lb small red potatoes halved
  • 2 lb frozen cut green beans
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • salt & pepper to taste

Instructions

  1. Sauté the bacon until crisp using the sauté function on your Instant Pot or in a sauté pan on the stove. Remove bacon, set aside, and save 3-4 tbsp bacon grease.

  2. Sauté the onions in the bacon grease until slightly browned, then add potatoes (cut side down) and brown slightly. Add olive oil if needed. Add garlic and continue cooking for a minute or two. Turn off the sauté function if using your Instant Pot.

  3. Add the green beans and chicken broth. Mix it all together.

  4. Set your manual high pressure setting to 10 minutes and cook. Allow a natural release, open the lid, and stir in the bacon. Add salt and pepper to taste.  

Crock Pot Instructions

  1. Place all ingredients in slow cooker. No need to sauté the bacon, potatoes or onions. Increase chicken broth to 2 cups. Cook for 4 hours on high or low for 6-8 hours.
